This simple dressing can be used as a tasty addition for many different recipes. Including the Avocado Salad.


  • 3 cups loosely packed basil leaves
  • 1 cup olive oil
  • salt (optional)


  1. First, rinse and drain basil leaves. Then, blanch basil leaves for 2-5 seconds in boiling salted water; shock immediately in ice bath for several minutes (until cool); squeeze out excess water.
  2. In a food processor or blender, mix basil and 1/2 cup olive oil until it is a smooth paste; then add remaining 1/2 cup olive oil and stir well.
  1. Using a fine wire strainer layered with cheesecloth, pour oil mixture through strainer into small bowl. Gently press basil to release remaining oil. Discard basil when finished.
  1. Cover and chill, let return to room temperature before using. Will hold refrigerated up to 2 weeks.
