I have to admit, figs and avocados didn't sound too good, but when I tried the recipe at a work potluck, I was hooked. Hope you enjoy it!
Ingredients[]
- 2 fresh jalapeno peppers
- 1 3/4 cups diced fresh California figs
- 1 tbsp. fresh lime juice
- 1 firm ripe avocado, diced
- 1 fresh ripe tomato, diced
- 2 tsp. granulated sugar
- 1/4 tsp. salt
- 1/2 tsp. ground coriander
- 1/2 tsp. ground coriander
- 1/4 tsp. garlic powder
Directions[]
1. Remove seeds and ribs from peppers and slice very thin crosswise.
2. Combine all ingredients in a bowl; mix to blend well. Chill for several hours
3. Serve.
