Yields: 6-8 servings
1. Preheat grill to medium heat; once hot, lightly oil the grill.
2. Trim, core, and peel pineapple. Cut into quarters from top to bottom. Slice out the core from each quarter. Cut each quarter slice into four pieces.
3. Combine cinnamon and sugar in one small bowl, place coconut milk into second small bowl
4. Dip sliced pineapple into coconut milk and then coat in cinnamon sugar.
5. Grill slices for 6 minutes on each side.
