Want a really fast, easy and tasty dessert? Are you looking for something that fits into a low glycemic index diet? Here's something great for you to try. Simple ingredients come together for a supremely delicious treat that fits into any healthy diet and best of all, is universal enough to be made throughout the year. Substitute with cranberry Jell-O and small chunks of apple for a healthy Thanksgiving dessert!

  • 1 box sugar free orange Jell-O
  • 1 can mandarin oranges, packed in natural juice or water, drained
  • Chopped walnuts (amount will vary based on your preferences; you can also use other nuts, too - the above picture shows this made with chopped pecans)

Prepare the Jell-O according to the package directions. Chill the Jell-O until partially gelled.

Gently stir in the mandarin oranges and the nuts until well-combined. Put back into the fridge and chill until fully set.

Spoon into small dessert dishes and top with a dollop of whipped cream, if you must indulge.
