2 - 8oz fillets of salmon; 2 lemons, thinly sliced into rounds; olive oil; salt + pepper.
1. Preheat the oven to broil. Meanwhile, prep the salmon by patting it dry with a paper towel, and slice the lemons into 1/4-inch rounds. 2. Arrange the lemon rounds on a baking dish in a single layer, and place the salmon over them. For easier clean up, line the baking dish with foil. 3. Drizzle the salmon and lemon rounds with olive oil, and season freely with salt and pepper. 4. Place the baking dish under the broiler for about 5 minutes, always keeping an eye on it to make sure the fish doesn't burn. Once the fish is golden on top, it will be cooked through. Use a large spatula to carefully transfer the salmon and lemons to the plate.
